Olive Wagyu, also known as Sanuki Wagyu, is a rare A5 Japanese Wagyu produced on Shodoshima Island in Kagawa Prefecture from Sanuki cattle fed a diet of roasted olive mulch. This unique feed enhances marbling, increases oleic acid levels, and creates golden fat with a rich, nutty flavor. Olive Wagyu was recognized for its fat quality at the 2017 Wagyu Olympics.
